Since many of us are in extended vacation mode, I will get right to the point. During meal makeover Monday, I have focused a lot on dinner meal makeovers, and I decided that Breakfast (being the most important meal of the day) deserves a post of its own. It is also by no coincidence that breakfast is my favorite meal of the day. Breakfast can jump start your metabolism and keep you from reaching for unhealthy snacks! For many of us, delicious breakfast conjures up thoughts of tall fluffy pancakes, french toast drizzled in syrup, and eggs. Well guess what, you CAN have a delicious breakfast without all the empty calories! I have 3 great breakfast recipes for you to fuel up your morning and keep you full until lunch!
1. Oat & Chia Seed Pancakes: This is a recipe that I adapted myself and have used tons of times. The chia seeds pack an antioxidant and fiber-filled punch to keep you full. These pancakes also have the benefit of being vegan and gluten- free if you would like them to be. I usually make a ton of them on Sunday and then keep them in the fridge. Popping them in the toaster and spreading some natural peanut butter on them makes for an easy (and tasty) breakfast on the go!

2. Egg "Muffins" (Mini Quiche): These mini quiches are not only adorable, but they are packed with protein to keep you feeling full all morning long. You can customize your quiche with whatever ingredients you like. I recommend baby spinach for an iron boost! They are super easy to make and, like the pancakes, you can make a bunch and freeze them for easy weekday breakfasts.

3. Overnight Refrigerator Oatmeal: This is one of my favorites! With just a few ingredients (and you can make a few at a time) you can make oatmeal that is ready to go when you wake up. This recipe also utilizes chia seeds, which act as a thickening agent. I love that you can make this recipe in tons of different flavors from cocoa & peanut butter to strawberry banana. The possibilities are endless and packed with nutrients!
