Hi there! Hope everyone had an awesome weekend and enjoyed this PERFECT fall (says the girl from upstate NY) weather! In my opinion, this is the best time of year for outdoor activities when the humidity is low and the temperatures are just right.
On another note, I have decided to do something fun with the blog throughout the Biggest Loser Challenge. Each Monday, I will feature a "meal makeover." I will be highlighting comfort food recipes-turned healthy. Everybody knows that when the temperatures start to fall, the comfort food cravings come on fast and strong. But never fear! This vegetarian chili recipe packs a whole lot of protein with the addition of quinoa, and tons of healthy vegetables to get those servings in! It is packed with flavor and will fill you right up. The author of this blog mentions that this recipe makes extra for freezing in individual containers, which is perfect for lunches!
