Hello everyone! Happy, happy Friday! All we have to do is get through today, and we are on weekend time! The other day, I was perusing Pinterest (I am an addict, I admit it) and I saw a post for healthy lunches to take to work. This of course caught my attention because I am always looking for healthy (and delicious) recipes to pack that will keep me full, and full of energy all day long. As a health and fitness professional I have to be extra conscious of the fuel I put into my body because I am sometimes working out multiple times a day! However, healthy lunches are important for all of us. Like a healthy breakfast, they can prevent snacking on unhealthy items between meals, and keep us from binge eating at dinner. Plus, it gives you something to look forward to in the middle of the day! I have selected my 3 favorite recipes from the original Pop Sugar post, and I have also included the link to the full post which has fifty recipes. These recipes may be healthy, but trust me they are anything but lacking flavor!

Roasted Sweet Potato and Quinoa Salad
This layered mason jar salad is packed with heart healthy and filling fiber! As an added bonus, the sweet potato helps to regulate your blood sugar. Plus, mason jar salads are super convenient because you can make a few in advance for an easy grab and go lunch.
Red Pepper and Lentil Bake
This comforting dish tastes sinfully rich, but is disguising a mega-dose of important antioxidant vitamins A and C. The lentils keep you full with lean protein!
Healthy Chicken Salad
This go-to lunch favorite gets a healthy and refreshing make-over by substituting mayonnaise for low-fat Greek yogurt. Even on a wheat bun, this lunch is under 400 calories and will stick with you from the boardroom, to soccer practice and beyond!
I don't know about you, but I am unattractively drooling on my desk, and looking forward to trying each and every one of these! Have a great weekend!
