Final Meal Makeover Monday

 
Hey there everyone! This will be the final week of the official "Meal Makeover Monday" series, however, I will of course still be posting about healthy recipes on a regular basis. To those of you participating in the Biggest Loser Challenge....CONGRATS!!! You made it!!!! You all did awesome!! You deserve a cookie. No really, this weeks makeover is a holiday cookie that you can keep up the good work with. While were on that topic, you should definitely keep up the good work, because you all have made some great improvements!!
 
With the holiday season upon us, we are sure to come across some desserts that are both naughty and nice. This lightened up (and vegan) gingerbread cookie from "My Whole Food Life" blog makes the nice list! These little magic cookies are free of refined sugar and utilize a vegan egg substitute. For those of you unfamiliar with egg substitutes, they are super easy.  A "flax egg" is 1 tablespoon of flax meal and 3 tablespoons of water. You just mix them together and stick it in the fridge for about ten minutes. It will end up the consistency of an egg. Ground chia seeds can be used exactly the same way for a "chia egg." Chia seeds are actually my preference, but the choice is yours! Either way these cookies will be a healthy and delicious addition to your holiday baking.
