Tomato Watermelon Salad

Tomatoes and watermelon are two of the best produce picks for hydration.
Ravenous Runner Tomato Watermelon Salad
A drizzle of balsamic vinegar helps bring together the fruits' tart and sugary flavors, and chopped fresh mint adds a subtle summery taste and burst of color.
This is easy to make and it pairs nicely with many cookout staples. Forget the chips as your side dish for a barbecue. Keep this recipe on hand and you'll be the most popular guest at the party. 


What you'll need:
4 cups coarsely chopped tomatoes (about 1 1/2 pounds)
2 cups coarsely chopped seedless watermelon in a serving bowl
2 tablespoons olive oil
1 teaspoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh mint
1/4 cup chopped pistachios (optional)

How to make it:
1. Combine 4 cups coarsely chopped tomatoes and 2 cups coarsely chopped seedless watermelon in a serving bowl.
2. Toss with 2 tablespoons olive oil, 1 teaspoon balsamic vinegar, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 2 tablespoons chopped fresh mint.
3.  Top with 1/4 cup chopped pistachios (optional).
